A new crop for us, Adzuki beans originate in East Asia and are related to Mung Beans. They are commonly used to made red bean paste for use in desserts but can also be eaten savory in a soup.
Adzuki beans fill an interesting rotational slot for us. They are not an ideal host to the insects and diseases present in our traditional dry beans (phaseolus vulgarisms) or soybeans (Glycine Max) which gives us a cultural tool to reduce pest pressure.
Our dry edible beans are dried to 16-17% moisture which preserves a smoother texture after cooking. Beans should be stored in a cool, dry environment to prevent spoilage. 50 lb bags available by request (2000 lbs minimum order).
