Our Hard Red, pearled to remove most of the skin and polished to remove dust. Excellent anywhere you would use pearled barley or rice. It has a nice firm texture with a sweet buttery flavor.
An extremely versatile starch, try it in beef and (not) barley soup, a light grain salad with tomato and feta, or wheat (not rice) pudding (with NYS maple syrup).
Because the seed coat is removed this product is exceptionally susceptible to meal moth so storage is best in the freezer or a sealed jar.
